Stall No:127, morning dispatch The stall is set out before first light. Produce that arrived overnight is sorted into crates and shown to buyers; these are the busiest hours for forklifts and lorries.
Antalya greenhouse, soil-grown Tomatoes grow in soil, watered through drip lines and trained upward on strings. Growing under cover carries the harvest beyond its outdoor season.
Hydroponic growing line Plants sit in insulated slabs rather than soil, with water and nutrient metered through drippers. Because the root zone can be controlled, yield and size stay steadier.
Packing facility Incoming produce is graded by size and colour, and anything bruised comes off the line. It is then packed into crates or cartons according to the order.
Korkuteli orchards Korkuteli is the high ground of Antalya. The gap between night and day temperature deepens colour in apples and firms the flesh.
Harvest team Picking is done in the cool of the morning so fruit reaches the crate before the day warms. Fruit picked in heat loses water faster and keeps less well.
