About the crop

Celeriac (root celery) is a winter root vegetable with limited but steady demand in Turkey; more than half of the national crop comes from İzmir.

Growing difficulty: Moderate It has a long 5–6 month growing season and needs regular irrigation and fertilising; root shape depends heavily on soil structure.

Climate

Growth is best at 15–21°C and stops below 10°C. Young seedlings tolerate light frost, but a mature root is damaged if it freezes.

Growing regions

For celeriac, İzmir leads Turkish production (52.4%), followed by Sakarya (13.7%) and Eskişehir (9.5%) (TurkStat, 2024). Total national output is about 29,000 tonnes.

Cultivation

Grown mainly in the open field, commercially in the Aegean, Mediterranean, Marmara and western Black Sea regions. Local production in Antalya is limited; most of what is sold at the market comes from other regions.

Harvest calendar

Seedlings are planted in spring (April–May) and harvested in autumn and winter (October–December); in some areas the crop is left in the field and lifted in stages.
