About the crop
Cultivated mushrooms (mostly Agaricus bisporus) are grown on compost all year round in closed, climate-controlled facilities. Antalya ranks first in Turkish production, with Korkuteli the leading district.
Growing difficulty: Hard It requires closed facilities with controlled temperature, humidity and CO2, plus sterile compost management; any lapse in hygiene or climate control quickly cuts yields.
- Climate
- Production takes place entirely in a controlled environment; growing rooms are kept at an air temperature of 14–18°C and 85–95% relative humidity.
- Growing regions
- Antalya leads Turkish production (29.5%), followed by Ankara (18.4%), Isparta (13.7%) and Afyonkarahisar (8.9%) (TurkStat, 2024). Total national output is about 75,000 tonnes.
- Cultivation
- Grown on compost beds in dark rooms; there is no open-field or greenhouse production. Antalya, Korkuteli in particular, has a large concentration of facilities.
- Harvest calendar
- There is no seasonal calendar; production runs all year in cycles of about 6–8 weeks tied to the compost cycle.
- Main challenges

- Green mould in compost (Trichoderma)
- Mushroom flies and their larvae
- Browning and moisture loss after harvest
- Storage
- Store at 0–4°C and 85–95% relative humidity. Mushrooms respire very fast and have a short shelf life; at room temperature they last only 1–3 days.
