About the crop

Beetroot is eaten in salads and pickles; volumes are small but demand is steady. More than half of Turkish output comes from Afyonkarahisar.

Growing difficulty: Easy A hardy vegetable; the main risks are root cracking and internal spotting caused by uneven watering.

Climate

Growth is best at 15–21°C and slows below 10°C. Young plants tolerate light frost, but the root tissue breaks down if it freezes.

Growing regions

Afyonkarahisar leads Turkish production (60.5%), followed by İzmir (10.1%) and Ankara (9.5%) (TurkStat, 2024). Total national output is about 24,000 tonnes.

Cultivation

Grown mainly in the open field, scattered across the Aegean, Marmara, Mediterranean and Central Anatolia. Local production in Antalya is limited.

Harvest calendar

It can be sown in two periods, spring (March–April) and late summer (August); harvest comes about 2.5–3 months after sowing.

Storage

Topped beetroot keeps for 4–6 months at 0°C and 98–100% relative humidity.
