About the crop

Spinach is the leading winter leafy vegetable; it grows quickly but spoils very fast after harvest. İzmir and Ankara lead Turkish production.

Growing difficulty: Moderate It grows without trouble in the field, but wilting and yellowing start very quickly after harvest, so speed in logistics is decisive.

Climate

Growth is best at 15–20°C. Temperatures above 24°C trigger bolting; young plants tolerate light frosts down to −5°C.

Growing regions

İzmir leads Turkish production (23.1%), followed by Ankara (21.2%) and Bursa (12.0%) (TurkStat, 2024). Total national output is about 237,000 tonnes.

Cultivation

Grown in the open field, and in some areas under cover for an early crop; the main production area is the Aegean (İzmir, Manisa, Aydın). Local and protected production in Antalya is limited.

Harvest calendar

In Antalya the winter crop is sown in September–October and harvested from November to February; the Aegean has two seasons, autumn and spring.

Storage

Even at 0°C and 95–100% relative humidity quality holds for 10–14 days at most; at 5–10°C it deteriorates faster.
