About the crop
Ginger is a plant of tropical origin whose rhizome is used as a spice, in food and for health purposes. Commercial production in Turkey is very recent and still limited.
Growing difficulty: Hard As a tropical plant it has no protection against low temperatures in Turkish conditions, especially in winter, and commercial growing experience in the country is still thin.

- Fresh ginger is stored at 13–15°C and 90–95% relative humidity; at 13°C with humidity down to 65% it loses too much water and shrivels. Mature rhizomes keep for 2–3 months at 12°C and 85–90% humidity.
