About the crop

Carrots are one of the staple root vegetables, eaten all year round and able to keep for months under the right conditions. More than 70% of Turkish output comes from Konya.

Growing difficulty: Easy The crop grows well in free-draining soil with standard irrigation and fertilising; the main risks are root cracking from uneven watering, and storage.

Climate

Root growth is best at 16–21°C; below 10°C and above 27°C root shape and colour suffer. Young plants tolerate light frosts of −2/−3°C, but the roots themselves are sensitive to freezing.

Growing regions

Konya leads Turkish production (71.6%), followed by Ankara (17.9%) and Hatay (8.2%) (TurkStat, 2024). Total national output is about 892,000 tonnes.

Cultivation

Grown mainly in open fields in Central Anatolia, above all in Konya. Local production in Antalya is limited; most carrots sold at the market come from the main growing regions.

Harvest calendar

In Konya the spring crop is sown in March–April and harvested in late summer and autumn; a summer sowing is also made. Winter supply to the Antalya market peaks from October to March.

Storage

Keeps for 6–9 months at 0°C and 98–100% relative humidity, depending on variety and preparation. Below −1°C the tissue suffers freezing injury.
