About the crop

Cabbage is a hardy winter leaf vegetable that trades heavily at the wholesale market in the cold months.

Growing difficulty: Moderate It is cold-hardy, but has a long growing period and is prone to head splitting and internal rot in storage.

Climate

A cool-season crop with an ideal range of 15–20°C. At 25°C growth slows and heads stay small; late varieties can tolerate down to −10°C.

Growing regions

Samsun leads Turkish production (36.0%), followed by Niğde (15.3%) and İzmir (4.6%) (TurkStat, 2024). White, red and black (collard) cabbage together total about 911,000 tonnes.

Cultivation

In Antalya cabbage is grown as a winter open-field crop; greenhouse use is limited.

Harvest calendar

Under Black Sea conditions seed is sown in stages from May to August and seedlings are planted out until the end of August. Harvest begins 3–5 months after planting.

Storage

Keeps for 3–6 weeks at 0°C and 90–98% relative humidity. A controlled atmosphere with low oxygen (2.5–5%) and raised carbon dioxide (2.5–6%) extends shelf life.
