About the crop
Potatoes are one of the highest-volume staples at the wholesale market; most of the crop is grown in Central Anatolia.
Growing difficulty: Moderate Storage and sprout control require know-how, and late blight pressure can be high.
- Climate
- A crop of mild to cool climates with wide adaptability; it is frost-sensitive.
- Growing regions
- Niğde leads Turkish production (13.3%), followed by Kayseri (12.4%) and Afyonkarahisar (10.2%); İzmir, Konya and Sivas are also major producers (TurkStat, 2023). Total national output is about 5.7 million tonnes.
- Harvest calendar
- Because potatoes can be grown in almost every part of the country, harvesting runs nationwide from April to the end of December.

- Greening of tubers exposed to light
- Storage
- After harvest, tubers are cured for about 8 days at 15°C and 95% humidity, then stored at 4°C and 95–98% humidity for up to 5 months depending on the variety. Ethylene in the store encourages sprouting.
