About the crop

Dry onions are a kitchen staple traded continuously at the wholesale market; spring onions and onion sets serve different seasons and markets.

Growing difficulty: Moderate Dry onions store well, but mistakes in curing or humidity control speed up rotting and sprouting.

Climate
The dry onion is a relatively cold-hardy long-day plant; spring onions are grown in the cooler part of the year.
Growing regions
Ankara leads dry onion production (38.1%), followed by Amasya (12.8%) and Çorum (11.8%); Eskişehir, Hatay and Adana are also major producers (TurkStat, 2023). Total national output is about 2.6 million tonnes.
Main challenges
  • Onion fly
  • Downy mildew (Peronospora destructor)
  • White rot (Sclerotium cepivorum)
  • Early sprouting in store due to humidity and ethylene
Storage
After harvest, onions are cured in the field above 24°C or with forced air at 30–45°C for 12 hours. For long-term storage 0°C and 65–70% relative humidity are recommended; pungent varieties keep for 6–9 months, sweet ones for a month at most.
